Tutorial: Homemade Hotcakes

Round. Fluffy. Greased with margarine or butter on top. Sprinkled with sugar. Can be dipped into condensed milk or maple/chocolate syrup in foodchains. Suited for breakfast or merienda. What do you think is it? Yea, you got it right! Pancake or Hotcakes as Filipino masses call it.





We had a Hotcake business since we were kids and still operating. Out of it, mom sent us three siblings to reputable schools. Now, the first among us is now a Police Officer. Yours truly, is now in fourth year college as an Education student. My younger sister is in her third year college taking up Education as well.
Our hotcakes are delicious yet easy to do though we're not using the instant pancake mix. It is actually suited for the budget. Affordable by anyone. As I remember, when mom started it way back 15 years ago, it only cost four pesos. Due to high-cost living and economic recession it turned out to be five pesos. Affordable still. In fact-We had a promo, when you buy ten, you'll get one free. Canteen operators get from us, then they will market it with 6 to 7 pesos. Affordable still.

I want to share my mom's secret of sweet success. Though we had a bitterness with someone else who suppose to be with us. Anyway, here's how it goes.


Materials Needed:
Bowl
Whisk
Flat Frying pan or griddle
Spatula
Ladle




Ingredients:
1 1/2 cups All-purpose Flour
3 1/2 teaspoons Baking Powder
2 tablespoons Sugar
1 1/2 cups Water or Milk (less if you want thicker pancakes)
1/4 teaspoon Salt 
1 Egg
3 tablespoons Oil

                                 
   

Procedure:
Mix the flour, sugar, salt, egg, baking powder in a mixing bowl. With a whisk, mix until the batter is free from big lumps or until relatively smooth. Set aside.

Grease the frying pan with oil, then heat it over medium high heat. When the pan or griddle is hot enough, scoop the batter onto the griddle/pan using a ladle. The size of your hotcakes depends upon the way you scoop it. You can make small or big sizes. Cook until its bubbly, it is approximately last for 1 to 1-1/2 minutes. 

Flip and wait until the other side turned brown. Just cook until it's fully set, approximately 1-2 minutes.
